Kulfi is traditionally produced by boiling milk for hours, producing an incredibly creamy kulfi. You must lower the volume of the milk by two-thirds, which can take a long, long time. Because it needs to be stirred frequently, you must stay in the kitchen while it simmers. The lengthy process yields a delectably creamy kulfi that will set your tastebuds to dance. But I’m not always patient enough for that. Kulfi is unlike any other ice cream in that it has a very distinctive texture. It has a very small crumbly texture from the milk solids and is incredibly creamy and rich. Kulfi is often made slowly and laboriously, which gives it its distinctive texture.
